Emergency Three Can Black Bean Soup

I went shopping hungry the other day. That’s usually a big mistake, but this time it produced a great new staple in my life… Three Can Black Bean Soup. Like I said, I was hungry, and I’ve been trying to follow a low-glycemic diet. Using some of the tenets of the South Beach Diet and other notable low-glycemic plans, I have lost weight when I’ve needed to. It works for me, so I try to stick to a reasonable facsimile of these particular diets when I cook.
So, I found myself wandering around our friendly, neighborhood grocery store late at night, hungry as a bear, looking at the pasta, rice, bread and sweets that were calling my name. I looked at my watch and decided that I had five minutes to get out of the store with something that was quick, easy, good and good for me, and on my diet! I turned a corner, both figuratively speaking and really, and bumped right into a display of cans of black beans. I love black beans anyway, but this particular night I LOVED black beans. They may have saved my diet! Inspired by the black beans, I quickly grabbed cans of two other ingredients, and the resulting recipe is so fast and easy and delicious, I’m sharing it here. FYI, the cost is under $4.00 and should feed two hungry people. Enjoy!
Three Can Black Bean Soup
1 15 oz. can black beans
1 14.5 oz. can diced tomatoes
1 14 oz. can chicken broth
Open can of black beans (just drain slightly, do not rinse, you want the liquid to thicken your soup).
Open can of diced tomatoes (any kind, but I like the fire roasted).
Open can of chicken broth (more or less, depending how thick you want your soup).
Pour black beans, tomatoes, then chicken broth into a sauce pan.
Add a dash of salt and black pepper (optional).
Add a dash of hot red pepper flakes (optional, but oh so yummy).
Add a dash of hot sauce (optional).
Add any other spice you want to, really.
Put over low to medium-low heat until heated through. Don’t let it boil, the beans are delicate. Have a nice green salad along with your soup to round out your meal.
I really do love to cook, but isn’t it wonderful to not have to think so hard all the time? It’s so nice to know that the next time you have an “emergency hunger” you only need to grab three cans!

I LOVE your black bean soup. It always amazes me how you can turn a few veggies and a few cans into a healthful, wholesome — DELICIOUS meal for us.
