Best Kitchen Tip I’ve Ever Figured Out – Tenders Into Cutlets

Okay, cooks…how many recipes have you tried where you have to pound a chicken breast flat, you know, into a cutlet? Well, I’ve tried and tried and tried to get a chicken breast pounded flat like they show on the cooking shows. I’ve failed every time.
Yup, I’ve tried a meat mallet, a cast iron frying pan, and a can of soup, but nothing, no nothing, works like it does on those dang cooking shows. The stupid thing just bounces right back, leaving the chicken breast a little flatter, but definitely not a thin cutlet. I’ve sliced them in half like a fish fillet, I’ve frozen them, I’ve tried everything.
Well, tonight I broke my wooden cutting board pounding the dickens out of a chicken breast… so that’s it. I was even tempted to talk my sister out of Mom’s old wringer washer to run the stupid thing through.
But, then a light bulb went off over my head… an idea… more of a duh! moment. Try a “chicken tender.” These things were already cut, exposing the tender meaty little ends. This sounded like a plan.
Voila! One slam with the cast iron skillet and the chicken tender was flattened within an inch of its chickeny little life! I had a perfect little cutlet before me, ready to stuff with my concoction of diced tomato, fresh basil, Stove Top stuffing (yeah, I cheated), and mozzarella cheese. OMG, the results were fantastic. This is the easiest thing I’ve ever found. One slam with the business end of a cast iron skillet and the chicken is ready to be turned into a gourmet dinner!
The recipes are endless. Asparagus with Swiss cheese; basil with Parmesan and tomato; brown rice with broccoli, tomato, and cheddar… the list goes on and on, and is making my mouth water.
I know I will look at those chicken tenders with a whole new appreciation from now on. My daughter said that in Miami they fry those cutlets up in a skillet like tortillas and fill them like they do burritos or tacos. This is another interesting thought.
